With a third of all food becoming waste, and even more on bread (80,000 tons in Sweden every year along!), we decided to do something about it. We founded Brave Brew, a local and circular beer company, with a mission to reduce bread waste, and launched our first beer, Crumbs.
We rescue unsold bread from stores and bakeries around Stockholm, which we then dry to brew local beer with craft breweries around the city. After getting the product into 50 stores, we realised that selling the product from shelf isn’t that easy, especially during a pandemic when you can’t do store demos or tastings.
We believe the solution to a linear wasteful system is local and circular. And the starch in bread is perfect for making beer! Our mission is to raise awareness of the bread waste issue, rescue as much bread as possible from becoming waste and create new circular business models, that can be replicated in other cities. That’s a hard sell from a crowded beer shelf in store!
We just launched Circularity-as-a-service for bakeries and retailers to be able to sell and promote local beer upcycled with local craft brewers from their bread waste – great . This idea can also apply for breweries, where spent grain could be upcycled into other valuable products for human consumption rather than being disposed of.
We scale up the solution by systemising our model and giving it away for other entrepreneurs in other cities around the world.
